Vineyard: Le Paradis Sancerre 2021 is a unique white wine crafted from 100% Sauvignon Blanc grapes grown on clay-limestone terroir. The vineyard, managed organically and biodynamically, produces a precise and persistent wine with an elegant mineral expression. Bottled according to lunar cycles, it reflects the essence of its 'Le Paradis' location.

Winemaking: Hand-harvested grapes are pneumatically pressed in sequence, with static settling for 48-72 hours below 10°C. Fermentation occurs in stainless steel tanks and 500-600L barrels (50% split). The wine is aged on fine lees for one year, followed by another year in stainless steel tanks, with bottling done according to lunar cycle.

Tasting Notes: Golden robe with bronze reflections, lively and intense nose, fresh palate with a precise and persistent finish, elegant mineral expression of limestone.

Food Pairing: Aperitifs, WhitePerfectly complements appetizers, white meats, and cheeses, as well as dishes like roasted chicken, creamy goat cheese, asparagus tart, and poached sole.
