Lestang 1573 - Tradition
Nestled in the heart of Sancerre’s golden triangle, Château de Lestang is a place steeped in history, perpetuating a long tradition of celebrations and epicurean pleasures. Its century-old vines have been witness to major political events and the lives of many iconic figures. Château de Lestang became the property of Rémy Graillot in 2012.

Winemaking: The alcoholic fermentation of Tradition 2021 begins in stainless steel tanks, with neutral yeasts preserving the precious liquid’s integrity. The wine remains in the stainless-steel tanks for six months to mature on the lees, which are stirred up regularly to enrich the aromatic complexity. This is followed by a second six-month period in the same tanks. The wine is bottled after a full year and carefully stored for a further year to achieve optimum stability.
Tasting Notes: A cuvée that unfurls captivating aromas reminiscent of childhood souvenirs. The nose at first reveals sweet and fruity candied notes, while the second nose releases mineral undertones of gun flint and graphite. On the palate, the wine’s perfect maturity creates an impression of fresh plants with hints of fennel and grass. Its tension conjures up lemon confit, lending a beautiful, long finish. Already a promising wine, Tradition will continue to thrive in the coming years.
Food Pairing: Harmoniously complements fresh seafood, asparagus, ceviche, and goat's cheese such as Crottin de Chavignol.
