Vineyard: At Domaine Emilian-Gillet, the environmentally friendly viticulture makes every detail count from the growing, winemaking, and aging. Here the terroir enhances the great potential of the famous grape variety of Burgundy. Chardonnay's vines are at least 45 years old and take advantage of a limestone-clay terroir. The yield is regulated to maintain the quality of the grapes.
Winemaking: This is an unoaked Chardonnay, manually harvested with a thermoregulated vinification without any yeast addition, so the wine can keep all its innate characteristics. A malolactic fermentation is made to reduce the natural acidity of the wine and appeal to its delicacy, then it is aged in a tank from 12 to 18 months. Bottling occurs only once yearly, and the bottles are kept in the cellar until the wine develops mature and ripe characteristics. The wines are discreetly released only when ready to be fully enjoyed
Tasting Notes: A bright yellow color. Ripe elegant nose of honey, citrus, minerals and slightly nutty. The palate is polished and balanced with an ample and round mouth fill and a persistent long finish.
