For instance, he was the first to produce a Madiran with 100% Tannat.

Grape Variety: 100% Tannat

Vineyard: Produced from vines that are more than 50 years-old, Vieilles Vignes come from the finest white clay terroirs, with small black and white pebbles on the surface. Replacement by marcottage (layering) provides a way of obtaining healthy ungrafted vines.

Winemaking: Depending on the vintage, the maceration lasts between 3 to 6 weeks. It is then followed by the fermentation and malolactic fermentation in new oak barrels. The wine is aged on its lees for 14 to 16 months and is in entirely new oak barrels which gives it originality and character.

Tasting notes: This is a full bodied wine. TheTannat provides concentrated notes of black fruits and soft aromas of cigar and mocha.

Food pairings: Vieilles Vignes can be enjoyed with duck breast, beef ribs, game, lamb, chocolate and red fruits cakes.
