Alma Cercius - Guillaume Aurèle
Guillaume Aurèle wines are crafted for hedonists who appreciate the rich flavors and aromas of a well-made Pinot Noir. The winery's dedication to traditional vinification methods and attention to detail in the vineyard result in a wine that truly pleases the senses.
Appellation: IGP Pays d’Oc
Grape Variety: 100% Pinot Noir
Winemaking: The wine undergoes a long traditional maceration, pumping over, punching down the cap, and micro-oxygenation on the skins, followed by malolactic fermentation. It is then aged on fine lees for 2 months in tanks under oxygen control.
Tasting Notes: Aromas of Morello cherry and violet, with a round and fruity profile and subtle tannins.
Food Pairing: Roasted quail, beef, creamy cheese like French Rocamadour.
