Grape Varieties: 50% petit manseng, 50% gros manseng
Winemaking: Grapes are manually harvested and undergo skin contact maceration for 12 hours, followed by gentle crushing and alcoholic fermentation in oak barrels. The wine is then aged for one year in barrels and one year in stainless steel vat on fine lees.
Tasting Notes: Fresh, intense nose with white flowers, exotic fruits, and citrus. Beautiful structure, lingering finish of mango and spices.
Food Pairing: Smoked charcuterie, salmon in court bouillon, finely cooked or grilled fish, white meat, sheep's cheese, langoustines with Thai basil, prawns flambéed with anise, veal blanquette.
