IGP CÔTES DE GASCOGNE
During the middle age, In a small French village called St Ambroix, located in the Occitan region the grapes harvest was so generous that the mayor of St Ambroix decided to organize a fest for its village and to invite people from all the surrounding villages.
To make sure those villagers would come massively and drink all the wine produced from the harvest, the mayor promised they would see a flying bull on that occasion…
The wine was drunk, the bull most likely flew… This is the LEGEND OF VOLO BIOU !
A brand directly inspired from the famous wine legend, “Volo Biou” is the Occitan translation for “flying bull”.

Gascony enjoys an ideal geographical ,position – between the Atlantic Ocean and the Pyrenees – for shaping highly expressive wines.
Winemaking:
Particular care goes into the state of health of the Sauvignon grapes and into their transport to the winery; it is essential to avoid any oxidation during the phase before fermentation in which the aromas first emerge. The modern wine making methods used include maceration on the skins for around 10 hours at 12°C in order to strengthen the aromatic potential and flesh of the wine. After the pneumatic pressing, the must is left to settle in stainless steel vats (48hrs) before the alcoholic fermentation is carried out under temperature control (16 to 19°C). The wine is then kept on the fine lees until filtration.
Tasting Note:
Visual: Pale yellow color and limpid.
Nose: very intense and characteristic of the Sauvignon; it combines exotic fruits aromas with fresh scents of lemon and grapefruit, along with subtle notes of white flowers. Palate: fresh and aromatic, marked by flavors of citrus fruit and white peach
Food Pairing:
Lively and lemony, it will pair well with fish and seafood. Its lightness and intense aromas also make it ideal for summer dishes, vegetarian entrees, goat cheese, or simply as an aperitif. Serve chilled.
