Practicing a traditional, environmentally-sensitive approach to vine-growing, Château de l’Escarelle is one of the largest and premium estate of Provence.
Grape Variety:
Syrah, Cinsault, Mourvèdre and Grenache
Vineyard:
The character of the wines from Escarelle is intimately linked to the altitude and geology of the estate. On limestone gravel-based soils, vines benefit from a very long sun exposure.
Winemaking:
After being harvested by hand and sorted, grapes undergo cold pressing and a cold pre-fermentation to stabilize the juice. Then the fermentation is done under temperature-controlled in order to preserve a maximum of the natural flavours. Then the wine is aged on fine lees.
Tasting Note:
A bright, rose petal color with Summer fruits on the nose, including strawberry and redcurrant. The palate is round and full-bodied with a wonderfully long finish.
Food Pairing:
Excellent as an apperitif or along with Mediterranean dishes.
