French Dog – Colombard Chardonnay

Winemaking:
The grapes are pressed using a pneumatic press. The musts of the resultant juice are left to settle under cold conditions. Alcoholic fermentation takes place in temperature controlled vats, started off by the addition of yeasts which are specially selected for their ability to bring out the aromas of the chardonnay and colombard grapes.
Tasting Note:
A crystalline, very pale yellow colour. Intense and fairly complex, first expressing citrus notes (lime, lemon) and a delicate mineral hint . Swirling then reveals white fruits aromas. Lively on the entry, great balance. The palate expresses lemon and a subtle hint of green mango
Food Pairing:
This wine makes an ideal aperitif and is the perfect partner to fish cooked in a sauce.
