Grape Varieties:
Grenache 80% – Syrah 15% – Mourvèdre 5%
Vineyard:
The total surface of the vineyard is 11ac, and the vines have at least 80 years old. Pebbles on the surface storing up the heat during daytime and releasing at night-time this enables the grapes to reach a high degree of maturity. Sandy-red clay subsoils
Winemaking:
The grape juice macerates for 21 days, then the wine is vinified into stainless still tanks. The aging takes place into big barrels call “foudres” (2 and 3 years old) during 18month.
Tasting note:
Robust red color, subtle , silky noise and elegant palate. Should be kept for 10 to 20 years to appreciate it to the full.
Food Pairing:
Well-balanced, with generous and solid tannins, this wine is recommended with game or any red meat with character. Fort desert enthusiast we advise to drink it on chocolate cake which will emphasize its cocoa and vanilla aromas.
