Through the AllNatt collection, Jean-Claude Mas purposely sought to showcase
Languedoc’s iconic grape varieties.
Vermentino is a grape variety originating from Italy, this stunning country where
Jean-Claude Mas met his mentor Gorgio GRAI.
Relatively late-ripening, Vermentino is well-suited to hot, sunny climates, so is seen
to flourish in Mediterranean climates. It is known for expressing attractive aromas
allying floral notes of hawthorn and lime blossom with fresh pear, often with a
touch of lemon or melon for a vibrant edge. Fresh leafy notes can sometimes
complete this aromatic spectrum.

The vines are 22 years old planted on clay, limestone and gravel soils

VINIFICATION PROCESS
Careful selection of the best grapes after a mechanical harvest. After destemming
of the harvest, a pneumatic pressuring without nitrogen takes place in order to retain the
must of the first pressing only. Settling at 10°C. Fermentation at 16°C with selected
yeasts for 2 weeks. Ageing: on lees for two months, in stainless steel vats.
TASTING NOTES
Pale lemon color with shiny golden hues. Nose is light, elegant and fresh, with floral
notes of hawthorn and lime blossom with fresh pears, with a touch of lemon. This
wine is fresh, smooth, superb minerality, flavors of the nose found in the mouth.
FOOD PAIRING
Ideal served at 9/10°C with a scallop’s carpaccio citrus dressing, seafood salads,
goat cheese or oysters.
