Chapelle Royale – Chablis Premier Cru

Vineyard region:
Grapes are supplied by local growers who have a long term and in-depth
relationship with Laroche. They work the whole year with the Laroche technical
team. According to a tradition in Chablis, grapes are crushed and pressed in the
property of origin.
Winemaking
Whole bunches are collected in a pneumatic press, then 12 hours settling at 12
to 15°C in specially designed wide tanks – these accelerate the natural settling
process.
3 weeks of fermentation at 18°C in stainless steel tanks.
9 months ageing on fine lees in stainless steel for most of wines and around 15%
in oak barrel.
Tasting:
A year like 2013 requires much attention. From Spring onwards, weather conditions were
particularly demanding, implying careful intervention in bud removal, cane positioning and leak
plucking, in order to aerate the canopy and limit the development of diseases. Picking took place
in a very short time frame, when the grapes were both ripe and healthy. Finally, 2013 was a very
demanding one, but the profile of each terroir is quite clear and the wines have harmony and the
typical salty finish of Chablis.
Bright gold colour. Intense nose with hints of almond and white blossom. This Premier Cru
offers a good balance of subtle white fruit flavours and fresh elegance.
Enjoy it with scallop and watercress salad, crayfish or mature goat cheese.
