Champagne Didier Chopin Brut
Champagne
Unique sustained champagne tint from black grapes. Highly developed nose with ripe fruits and a taste of pastries. The Pinot Noirs and Meuniers bring to this champagne a certain smoothness, freshness, a pleasant and simple curve as well as expressive and fond. This champagne is a pure delight.
This champagne took part in the competition “Concours de Vins et Terroirs Authentiques” in Belgium. Ranked 14 out of 400 participants.
Grape varieties:
40% Pinot Noir, 60% Pinot Meunier
Winemaking:
Traditional vinification by avoiding fermentation in tanks premature oxidation. Fermentation separated.
Wines of various partial malolactic and aging in tap to keep the complete aromas possible.
A light dosage of Brut to keep the balance among fresh, fruity and vinosite to finally keep the value of the wine’s character.
Ageing:
Assembled for 3 years to have a constent quality after bottling. Then it’s stocked in lattes for 5 years.

COLOR:
Vivid Color with clear golden nuance.
NOSE:
The first nose presents the aromas of the white fresh of fruits, like apple and prune.
PALATE:
Fresh and frank on the palate.
Food pairing:
Balanced and fruity, it goes well with starters based on fish and shellfish.
