Domaines Paul Mas – Jardin de Roses

Share

The aromatic maturity of our grapes is essential to produce aromatic, fruity and floral rosé wines, close to what we can smell in a rose garden. The “Centifolia” rose is known for its spicy and honeyed aromas, the “Traviata” for its light fragrance with a touch of apple, the “Red Eden” for its power, the “Dumas” rose for its heady fragrance, the “Gallica” for its “old rose” fragrance and the “Alba” for its citrusy notes. It is all these aromas and characteristics that illustrate the Rose Garden. Wine, like this bottle, will be able to accompany the simplest meals as well as the most gastronomic ones.

Each grape variety is vinified separately. Destemming, direct pressing (pneumatic). Fermentation for 3 weeks at 16 ° C (maximum) with selected yeasts.
The wine is aged on lees with regular batonnage for 40 days in cement vats. During the vinification, we regularly rack the wines in order to keep a maximum of fruit and concentration.
