Domaine de l’Olivette – Tradition
Bandol AOC
The Rosé Domaine de l’Olivette draws its complexity from the aromatic subtleties of the Cinsault, the suppleness and structure of the Grenache and the typical variety notes of the Mourvèdre. The sustainable farming with respect of the natural potential is the priority of the estate.
Grape varieties:
Grenache, Cinsault, Mourvèdre
Vineyard:
For two centuries, the vineyard has been under the loving protection of one family. Over the years, they have been able to preserve all the local and typical characteristics of this wine. The conditions for qualifying for the Bandol AOC are not only complied but even surpassed. Yiel is deliberately kept low: 40hl per hectare, enabling the wine to fully blossom and keep all its fragrance, body and flavour.
Production:
At the same time the family has not neglected the technical aspect, keeping up to date with technology and aiming at new heights in expressing all the characteristics of this exceptional soil. Temperature-controlled facilities complement the work of the oak barrels: computerization of production data works alongside human know-how and skills, all under watchful eye of the estate’s oenological laboratory.
After harvesting, the total grapes undergo destemming. Then the skin maceration takes place at low temperature depending on the wine, in order to optimize the expression of each aromas.
Tasting Note:
This wine delights with its salmon color of orangey reflections with subtly blending flowers and red berries. Its fruity and titillating taste is refreshing and its harmonious balance give it a sedative character
