Vineyard:
Technique and hard work combine grape varieties, environment and terroir to obtain the special quality expressions of the wines. At the heart of all SecondoCerchio’s commitment is the principle that each grape variety achieves its optimum quality expression only in certain environments. The Catturasogni was born from two vineyards in Chianti Classico and in San Gimignamo located in the Tuscany region. A few acres cultivated with great care, where the vines are trained following the guyot and cordon royal system.
Winemaking:
The fermentation takes place in open oak barrels with a long skin maceration, then the wine is aged in oak barrels and clay container during 14 to 16 months. Before being release on the market the wine rests an entire year in bottle.
Tasting Note:
Bright ruby color, with an intense nose of blackberry, cocoa and walnut. Medium body, silky tannins palate with a flavorful finish.
Food Pairing:
Match with all types of meats, tomatoes based dishes, Italian food ans cheese. To be served at 62-64 F.
