Hubert de Boüard is the joint owner of Château Angélus, the Saint-Emilion 1st Grand Cru Classé, and a world-renowned consultant oenologist. He has joined forces with Yvon Mau, Bordeaux wine traders since 1897, to reveal some little-known but fine, high-potential terroirs. They share the same am- bition: to craft exemplary Bordeaux wines in a fruity, beautifully-balanced style that is accessible to all.
Grape Variety:
55% Merlot – 40% Cabernet Sauvignon – 5% Cabernet Franc
Vineyard:
This estate lies at the top of the commune of Saint-Michel-de-Lapujade, at the southwestern tip of the Gironde and around ten kilometres east of La Réole. The vineyard covers the hillsides and enjoys wonderful south and southwest facing outlooks.
Winemaking:
Single Guyot pruning.
Sustainable agriculture certified.Tillage every other row and natural grass cover.
Operations: debudding, leaf thinning and fruit set thinning depending on the vintage and plot.
Plot selection.
Traditional vinification in fibrex vats.Destemming, crushing, vatting.
Long vatting period with cooling system, 2 to 3 pumping over operations per day.
Post-fermentation maceration Horizontal pressing.
Tasting note:
A delicate, complex nose of cherry and blackcurrant. Dense on the palate, bringing together ripe fruit and vanillanotes, with a toasted finish.
Food Pairing:
Serve with dishes such as a cassoulet or salted pork with lentils.
