French Dog – Merlot

Predominantly clay and silt on the hillsides and valleys of the Aude region

Winemaking:

The healthy, crushed and destemmed harvest is vinified in the traditional manner.  Fermentation and maceration take place at a controlled temperature, with maceration for approximately one week. Final blend  integrates oaky merlot, giving roasted and vanilla hints.

Tasting Note:

Deep brilliant raspberry colour, with purple rim. A pronounced nose with fruity  (black plum and blackberry) and vanilla notes. Well-rounded palate,  gourmand and fruity. That wine reveals delicious aromas of red fruits and chocolate.

Pairing Food:

The Merlot will be the perfect companion of white and read meat, tomato based dishes and pastas.
