Château La Négly – Prieuré Saint Jaume

The understanding and the protection of ecosystems is essential for Christophe Malfaz in order to produce great grapes and wines. Moreover the organic agricultural process is a fundamental part to make the Prieuré Saint Jaume.
Grape varieties :
40% Carignan – 20% Grenache – 20% Syrah – 20% Cinsault
Vineyard:
Vines are 15 years old on average and grow on a clay and limestone soil over 27 acres.
Winemaking:
After a manual harvest, grapes are destemmed before the fermentation that takes place in concrete vats, then the wine is aged for 7 to 8 months in concrete vats.
Tasting note:
This wine has an intense color, the nose offers aromas of red fruits such as blackcurrant. The palate is rich, dense but remains balanced. This wine combines strength and freshness and the finish is long, subtle and delicate.
Food pairing:
This wine will match all kinds of meats but espeically beef, and hares.
