Grape Varieties:

 Syrah(60%), Carignan (30%), Grenache (10%)

The grape is harvested by hand for the old carignan. All the varietal are fermentated separately with long traditional extractions (28 days).for the syrah and carbonic maceration for the old cardigan. The wine is aged in tank for 2 years in order to have velvet round tannins.

Tasting notes:

Deep coloured, spicy and concentrated mouth with a very good length. There is a complex nose of dark fruits, freshly cracked black pepper and herbs de Provence. The palate is full bodied with rich, juicy fruit filling the mouth. This wine is really ample and marked by elegance..

Les Cimels Costieres de Nimes is also outstanding, showing fresh, perfumed notes of plum, blueberries, charcoal, crushed flowers and leather on the nose. This is followed by a medium to full-bodied, fruit-filled red that has notable freshness, soft tannin and a clean finish. It’s a beautifully Provencal effort to enjoy over the coming 3-5 years.

Food pairing:

To be drunk the next 5 years to various cold or grilled meats and game dishes of various kinds.
