Situated in the villages of Collioure, Port Vendres, Banyuls sur mer and Cerbère.
Detrital soil, schist from the primary era and granitised micaschist..
Grape Varieties:
Grenache noir : 100 % (40 years old)
Winemaking:
The grape selection (grape varieties, sanitary state and level of maturity).
Grapes de-stemmed and crushed. Temperature controlled fermentation (28°C) Fortification on the grapes followed by a pressing after several weeks under skin maceration with the alcohol.
Tasting notes:
Bottled early in order to keep the fresh and fruity aromas, typical of the Rimage style.
Food pairing:
Excellent to drink to aperitive moment with devils on horseback. Or drink Rimage as dessert wine with black forest.
Temperature service should be around 14°- 18°C.
