French Dog – Cabernet-Sauvignon

Share

IGP Aude

Grape Variety:

Cabernet-Sauvignon

Vineyard:

Gravels on clay and limestone soil

Winemaking:

Winemaking takes place in temperature-controlled vats. After a short, pre-fermentation, maceration, the fermentation takes place a very quickly (over 4 or 5 days), and the wines are then immediately run off. This technique enables the richness and generosity of the Cabernet grapes to be fully expressed.

Tasting Note:

Deep ruby colour, with raspberry rim. Delicate fruity nose, first evocating of berry’s juice; when agitating, raspberry and blackberry notes become more intense, mingled with hot spices (cinnamon and nutmeg). Fleshy and well-balanced palate, expressing both powerful fruit and varietal elegance of Cabernet Sauvignon grape. Fine strong finish of blackberry, blackcurrant and cocoa

Pairing Food:

This wine is the perfect for white and red meats and also cheeses.
