The family Hirissou have been leading this vineyard for 3 centuries, the 6th generation is now running the estate.

Grape varieties:

60% Ondenc – 40% Sauvignon

Vineyard:

Vines grow on a limestone soil along the right bank of the Tarn River.

Winemaking:

After a manual harvest, grapes undergo a fairly short static decantation before the fermentation.

Tasting note:

The nose offers exotic fruit flavors and the palate is full-bodied, rich and fresh.

Food pairing:

This wine will match with charcuterie, cold fish and shellfish.
