The grapes come from a very steep little plot selection of vines embedded between Ampuis and Saint-Cyr- sur-le-Rhône. The southern orientation, a gentle wine making, a maturation that takes its time and bottling without filtering… Total respect is given to this wine and its terroir.
Winemaking:
All the grapes are harvest by hand before a the pellicular maceration which permits to extract intense aromas. The fermentation is temperature-controlled, and the aging in barrels last for 15 months.
Tasting Note:
Using a carafe is necessary, undoubtedly required, if possible in the morning for dinner, because in its youth this wine will bene t from being aired out. At rst a little bit austere, Face Sud comes to its own with time. It then o ers re ned aromas of things like violets, black currants, tru es, rosewood and sandalwood, followed by notes of smoke and split stones. To be kept between 10 to 15 years without loosing its balance.
Food Pairing:
We like it with truffles and tagliatelle, a farm chicken or so rind cow’s cheeses like Brie de Meaux or Pont- Lévêque.
