The Mediterranean climate, the exceptional terroirs and the latest modern technical vinifications make this wine very fruity and elegant.
Grape Variety:
100% Cabernet.
Vineyard:
Limestone-clay plains in west Aude, with good temperature variation between day and night.
Winemaking:
Burgundian method with gentle extraction of grapes using pneumatic punching down. Low-temperature winemaking (24°C) to preserve the subtle aromas of Cabernet. Short vatting (10 days), pressing.
Wine clarification before malolactic fermentation. Aging on fine lees until bottling.
Tasting Note:
Deep garnet red colour. Strong and aromatic nose of red fruits mixed with liquorice notes. On the palate, this cabernet is full-bodied with round tannins.
Food Pairing:
Try with lasagna or fried magret. Serve at 16°C.
