Vineyard:
The vineyard of Chateau des Fines Roches is on a 120-acre property, over-hanged by a magnificent castle. The vines are at least 80 years old and planted on red clay soils with pebbles on the surface. Storing up the heat during daytime and releasing at night-time they enable the grapes to reach a high degree of maturity.
Winemaking:
Traditional vinification in stainless-steel tanks with in average 28 day of vatting. Around 12 month aging in both demi-muids and barrels of 2 or 3 years old and at least 1 year in bottle.
Tasting Note:
Deep ruby color, expressing red berries fragrances, spices and delicate notes of vanilla. These aromas bring finesse and loudness to the mouth. After 15 to 20 years of aging, the wine will develop cocoa bean and stronger vanilla aromas.
Food Paring:
To be drunk now, open the bottle several hours before serving. To serve ideally with game such as stew or as a dessert with a Black Forest Cake or any chocolate desserts.
